A safe and simple process
The pea conversion process at the Roquette factory in Vic/Aisne is safe and reliable:
- The pea flour is obtained by dry grinding,
- The flour is hydrated,
- After separation of the starch and fiber, then follow the steps where the protein coagulation occurs when it is purified and carefully dried in an atomizer.
