Which proteins are favored for tomorrow?

The choice of protein sources constituting our daily diet has impact. Animal proteins are expensive in our world, and in the future they will become even more costly for our planet.

 

Increasing the amount of quality plant proteins in our diet while reducing the amount of animal proteins will no doubt have a substantial impact on global warming, as demonstrated by a recent study (Ref. Medical Journal The Lancet) and this will make it possible to reduce excess weight gain along with the risks of perceived diseases of civilization (obesity, cardiovascular diseases, etc.).

 

We need to look at rebalancing our diets with an equal 50-50 intake of both animal and plant proteins. This can lead us to rediscovering traditional dishes with harmonious combinations of plant proteins:

  • Appetizer: corn tortilla (grain) + humus (legume)
  • Salad: soybean sprouts (legume) and corn (grain)
  • Couscous: semolina (grain) + chickpea (legume)
  • Paella: rice (grain) + peas (legume)
